Albumen Powder
The secret ingredient to your baking, this egg white powder (‘albumen’) is made from quality eggs. Use in place of fresh egg whites.
How do I reconstitute and use the egg white?
One part by weight of Egg White Powder to seven parts by weight of water. Determine the amount of water required, then add the powder to the water while mixing. Whisk or beat to desired consistency. Refrigerate any reconstituted Egg White Powder between 0 deg C and 4 deg C and use within 24 hours.
Lemon Whole Dried Powder
What intense, amazing form of the humble lemon. This is created by drying the entire lemon then “blitzing” to a powder. We use to create a wonderful flavour to our Bircher Muesli – soaking our Bircher overnight with milk or juice allows the lemon to infuse the entire blend in combination and balance of figs, oats and barberries. Sensational!
Lemon Powder can be used in many recipes savoury and sweet where a punch of lemon is required.

So you love Almonds? – who doesn’t, natural or slightly roasted we use then across a wide variety of our blends in muesli, nut mix’s and Almond meal in slices. We only use Australian straight from source, Carmel and if we can’t get them Nonpareil variety – packed full of health energy for you day. Hazelnuts Whole & Roasted
Hazelnuts are perfect in working with chocolate and also used to make praline, though we do use them in muesli also. Roasted or blanched natural these little guys are packed full of energy and plenty of health benefits. Though Nutella does snap up most of the worlds crops of Hazelnuts there are still plenty to go round most of the time!

Organic Quinoa Puffs
With a natural toasty and nutty flavour, our Quinoa Puffs add crunch and nutrition to our Almond Quinoa GF Muesli. Quinoa produces its own tannins which act as a natural insecticide to protect the plant. These tannins are quite bitter in taste, so the quinoa is extensively washed before being puffed in a high heat vacuum chamber.
